Cooking from the Garden

We got our first big bowl of food out of the garden this week!  Woohoo!  Since it is a lot of effort to keep up the garden, we make sure not to waste anything we grow.

We harvested several eggplant, two zucchini, one summer squash, a cucumber, purple beans and two small tomatoes (not shown).

The first meal we made was a squash, zuchinni and purple bean stir fry.  We grilled the veggies.  It was so good even the baby ate her food happily.  The purple beans turn green when cooked.  Pretty cool.

Then we had pitas with a filling of baba ganoush, cucumbers and tomatoes.  Baba ganoush is like hummus, but instead of using chickpeas, you use the innards of the eggplant.  We ordered two big jars of tahini to make the baba ganoush creamy.  We will be eating a lot of this healthy, tasty dip this summer.

    Healthy and gorgeous! Of course, I’m referring to Miss Petrie, who looks great with such a healthy diet of home grown veggies. Way to go, Mrs. Petrie!
