Strawberry Cheesecake Frozen Yogurt
While pining for a sweet, chilly treat one afternoon, I decided to try making frozen yogurt using ingredients I had in the kitchen. We have a KitchenAid mixer with an ice cream maker attachment. We haven’t used the ice cream attachment very much and I think part of the reason is that the recipes for ice cream are such a pain to make. I am not about complex in the kitchen. So I made up a recipe using ingredients I thought would blend well.
Strawberry Cheesecake Frozen Yogurt
- 2 cups whole milk yogurt/Greek yogurt (I used our homemade yogurt.)
- 1/2 pound strawberries
- 1 brick of cream cheese
- 1 cup powdered sugar
I blended the ingredients in the blender then put them in the ice cream maker and let it do its thing for about 20 minutes. The fro-yo will look like real fro-yo when it’s ready. If you put it in the freezer over night and eat it the next day, the texture will be even better. Just let the fro-yo thaw for a few minutes before you scoop it up.
Part of what gives the frozen yogurt a good taste and texture is the fat in the yogurt and cream cheese. You can try this with low fat yogurt, but I think it will be very ice crystal-y due to the high water content. Fat is good!
