Harvesting Eggplant, Jalapeños and a Tiny Turtle

We have our first harvest of the season!  The next three months we will enjoy the fresh food on a daily basis.  While looking at our garden jungle…

we found this little guy.  He is just adorable.  Although he is part of the harvest, we do not plan to eat him. ;)

 We do, however, plan on grilling the eggplant and jalapeños and eating some creamy rice as a side.

If any of you are canners, can you recommend a resource book or website?  I am interested in preserving some of our garden bounty, but have absolutely no experience with canning.

    A turtle–cool! And look at that beautiful eggplant and peppers–I envy your fresh meal using those. You might try the Ball Blue Book Guide To Preserving–it is a slim paperback, but it has directions for all the different ways you can preserve foods, and lots of different recipes to give you ideas. I think it’s a good reference book. Take care and have a great week!

    I highly recommend The Complete Book of Small Batch Preserving. I have several recipes on my blog from that book.

    Your raised beds look great and so does your first harvest of the year. That eggplant is massive! Like Athena, I would recommend the Ball Blue Book Guide as a starting point. It is crammed with good inforamtion and safe recipes that are easy to follow. Then, once you gain some confidence, you can branch out to other books from there.

    Ah cute little turtle! :) Reminds me of the little toad that hopped out practically onto my foot the other day and startled me to say the least! :

    I too would recommend looking for the Ball book or going online to the Ball website. There is also a girl that has a great blog called “Food In Jars ” / if you googled food in jars blog it would probably show up right away

    I used to can alot when I was younger…reference Ball for basic info and go to her blog for inspiration and fun and wonderful pictures :)
